Buffet Lunch for CPLG Hammersmith 25th March

I've been busy preparing a buffet lunch today, delivering the food to the 6th floor offices of CPLG. I received some fabulous cherry tomatoes from Andreas today, that went into a rocket and cherry tomato salad. They were so sweet and so crisp, all that was needed to finish the salad was a drizzle of olive oil. The twice baked aubergine salad at the front of the second photo is a great vegetarian option and one of my favourite dishes, and it's also gluten free, dairy free, and vegan. The chocolate and oatmeal cookies are really crisp and crunchy and taste yummy. I missed Hanna today....hence the below par photography!

Apple, marmalade & sultana cake

A wonderful moist cake, lighter in texture than a traditional fruit cake, with quite a boozy kick. As I was in mid Wales last weeken, I had plenty of free range eggs, the marmalade I received from Stuart last week (see my post below calle Dinner for 41 Club), and the very last of the apples from mums orchard.

I found the recipe in River Cottage Fruit Everyday and think it would be  prefect for tea Easter Sunday.
